How To Make a Soul Food Dinner in The Slow Cooker

Slow Cooker

  1. In a small bowl, mix together the seasoning ingredients. Spray the slow cooker with cooking spray. Add the chicken thighs. Add the spices & mix until all the chicken is well seasoned. If you want, save a bit of the seasoning for the sweet potatoes.
  2. Add the greens on top of the seasoned chicken. Add the garlic. Pour the apple cider vinegar and chicken broth on top. Add the sweet potatoes on top of the greens.
  3. Cook HIGH 3-4 hours or LOW 6-8.

Instant Pot

  1. Pour the cup of chicken broth into the Instant Pot.
  2. In a small bowl, mix together the seasonings. Season the chicken with the seasonings and add to the pot.
  3. Add the sweet potatoes on top of the chicken. Close lid and seal valve. Set high pressure and cook for 8 to 10 minutes (8 minutes for boneless thighs, 10 minutes for bone-in).
  4. When cooking time is complete, quick release the pressure. Using tongs (they will be hot), remove the sweet potatoes and the chicken. Add the greens.
  5. Close lid and seal valve. Set high pressure and cook 5 minutes. When cooking time is complete, quick release the pressure.

What Cut Of Chicken To Use

This recipe calls for chicken thighs. This can be bone-in, boneless, skin-on, or skinless. Usuually I will encouage you to use your preferred cut of chicken but this is not a recipe to substitute chicken breasts. The cooking time is too long; white meat will overcook and dry out during the process.

What Type Of Greens To Use

Use you preferred type of greens! Greens come in different forms. Most restaurants serve collard greens. Collard greens are a personal favorite but I honestly enjoy all greens whether they be collard greens, mustard greens, turnip greens or kale greens.  What you see in the pictures is collard greens.

  1. I was putting this together and realized that there’s an ingredient that is not in the ingredients list. In step 2 (crockpot) you say, “add the garlic” but there is no garlic listed except the powdered version which is included in step 1 as a seasoning. I’m sure it was a simple oversight. Consequently I didn’t add it to my version that I just put together. I’ll let you know how it comes out.

As a change, because I happen to have it, I used sweet smoked paprika straight from Hungary. I’ll let you know how that turns out as well. It’s much stronger than what you can buy at the local grocery store so 2 teaspoons may have been a bit too much. Again, I will let you know how it turns out. Thank you very much for this recipe! It really appeals to me on a cold winter night 🙂
