Skillet Tomatoes & Feta (Low-Carb)

Ingredients

  • 16 ounces cherry tomatoes tomatoes
  • 2 tbsp feta cheese, crumbled
  • 2 tsp balsamic vinegar
  • 2 tsp extra-virgin olive oil
  • Pinch salt & Pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add tomatoes, balsamic vinegar, salt & pepper. Cover & cook until tomatoes are soft, approximately 10 minutes.
  3. Add feta cheese and cook an additional 5 minutes.
  4. Top with fresh parsley.
