Crockpot Cajun chicken and sausage is an easy Southern inspired recipe that will have your entire house smelling amazing as it cooks. Succulent chicken thighs, smoked sausage, and a blend of Cajun spices slow cook to perfection in this flavorful meal. Instructions to make this Cajun chicken recipe in the Instant Pot are also included.

Ingredients

  • 1 1/2 pound boneless, skinless chicken thighs
  • 12 ounces smoked sausage, sliced into 1-inch pieces
  • 1/2 cup onion, diced
  • 1 large bell pepper, diced
  • 3 celery stalks, sliced
  • 2 cloves garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 15 ounces diced tomatoes in juices
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon oil (for Instant Pot only)

Instructions

Slow Cooker

  1. Add all ingredients to the slow cooker. Stir to mix well.
  2. Cook HIGH 3-4 or LOW 6-8 hours.

Instant Pot

  1. Turn on the pressure cooker and select sauté. Once hot, add the oil, bell pepper, onion, and celery. Cook 3-5 minutes or until soft. Add the garlic and cook an additional minute. Turn off the Instant Pot.
  2. Pour in broth and deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon.
  3. Add sausage, chicken, diced tomatoes, and Cajun seasoning. Stir to mix well.
  4. Close lid and seal valve. Set high pressure and cook for 7 minutes. When cooking time is complete, quick release the pressure.
