Slow cooker Cajun shrimp boil has all the fun and taste of the classic Cajun feast…without the fuss. Perfect for a social gatherings or a fun family meal, you can serve this easy seafood boil recipe year-round! Cooking a shrimp boil in the slow cooker allows you to enjoy the spirit of a boil without any monitoring.  Instructions to make this tasty Cajun shrimp boil in the Instant Pot are also included.

Ingredients

Units Scale
  • 1 pound uncooked, shell-on shrimp
  • 12 ounces Andouille sausage cut into 1-inch pieces
  • 3/4 pound baby red potatoes, or red potatoes cut in quarters
  • 2 tablespoons Cajun seasoning
  • 2 ears of corn, shucked and broken in half
  • 1 lemon, cut in half
  • 1 small onion, cut into quarters
  • 2 whole garlic cloves
  • 1 bay leaf
  • 5 to 7 cups of water

Instructions

Slow Cooker

  1. Add all ingredients EXCEPT the shrimp to the slow cooker. Stir to mix well.
  2. Cook HIGH 2-3 hours or LOW 4-6.
  3. Stir in shrimp gently and cook 10 minutes or until shrimp are pink.
  4. Drain water & serve.

Instant Pot

  1. Add Cajun seasonings and water to the pressure cooker. Stir to mix well.
  2. Add all other ingredients EXCEPT the shrimp.
  3. Close and seal vent. Select high pressure for 4 minutes. When cooking time is complete, quick-release the pressure. Open the lid.
  4. Add the shrimp. Place lid back on the pressure cooker and let is on the WARM setting for 3-5 minutes or until shrimp are pink.
  5. Drain the water and serve.
