Slow Cooker Chicken And Rice

Slow cooker chicken and rice is an easy one-pot recipe that can be served any day of the week, any time of the year. Chicken, rice, and herbs cook together in this simple yet tasty Crock-Pot recipe. Instructions to make this easy chicken recipe in the Instant Pot are also included.

Ingredients For Slow Cooker Chicken & Rice

  • Chicken
  • Rice (brown or white)
  • Seasonings: Italian seasoning, salt, pepper, garlic powder, onion powder 
  • Chicken Broth

How To Make Chicken & Rice In The Slow Cooker

Slow Cooker

  1. Add the rice, broth, Italian seasoning, salt, garlic powder, onion powder, and pepper to the slow cooker. Stir to mix well. 
  2. Add the chicken on top of the food in the slow cooker. Season the chicken with the remaining 1 teaspoon of Italian seasoning. 
  3. Cook HIGH 2-3 hours or LOW 4-6.

Instant Pot 

  1. Add the broth, rice, Italian seasoning, salt, pepper, garlic powder, and onion powder to the pot. Stir to mix well. Stir in the rice. Add the chicken on top. 
  2. Close lid and seal valve. Set high pressure and cook 22 minutes. When cooking time is complete, quick the release pressure.

What Type Of Chicken To Use?

Technically you can use any cut of chicken that you want however I recommend a dark meat like chicken thighs. I like to use boneless, skinless thighs with this recipe so I can shred it. Having said that, however bone-in, skin-on works well too. If you want to use chicken breasts then I suggest using bone-in breasts.

What Type Of Rice To Use?

This slow cooker chicken and rice recipe uses brown or white rice. Not instant! Rinse the rice before adding it to the slow cooker to wash away any dirt, film, and extra starch.

Crock-Pot vs Instant Pot

Since the slow cooker (Crock-Pot) and electric pressure cooker (Instant Pot) function differently, the rice to broth ratio changes depending on which appliance you use. The slow cooker uses a 2:1 broth to rice ration & Instant Pot is 1:1.

Tips & FAQs

  • I encourage you to use this recipe as a base. Feel free to add in extra ingredients like 1 cup of frozen veggies or raisins and nuts. 
  • If using skin-on chicken and you want crisp skin you will need to remove the chicken from the appliance & place it under your oven’s broiler for 3-5 minutes. 
  • I do not recommend letting this meal sit in the slow cooker or Instant Pot on the WARM setting. When rice is left on a stove-top burner too long, it will overcook & burn. A slow cooker (or Instant Pot) is no different. When the chicken & rice is done cooking, I suggest you turn off the appliance.
  • When making this in the Instant Pot, if you use skinless chicken, you don’t need to sauté the chicken.
  • After cooking time has completed, if you may find that your rice it too wet (excess liquid), the solution is simple. Regardless of whether you use the slow cooker or Instant Pot, turn the appliance off & set the lid ajar. The excess liquid should evaporate.
  • Store leftovers in the refrigerator for up to 4 days. 
  • I used a 6-quart slow cooker or Instant Pot.

Ingredients

  • 1 pound chicken thighs
  • 1 cup long-grain brown rice or white rice, rinsed
  • 2 cups low-sodium chicken broth or water (1 1/3 cup for Instant Pot)
  • 1 tablespoon Italian seasoning or another dried herb
  • 1 teaspoon salt (or more)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

Instructions

Slow Cooker

  1. Add the rice, broth, Italian seasoning, salt, garlic powder, onion powder, and pepper to the slow cooker. Stir to mix well.
  2. Add the chicken on top of the food in the slow cooker. Season the chicken with the remaining 1 teaspoon of Italian seasoning.
  3. Cook HIGH 2-3 hours or LOW 4-6.

Instant Pot 

  1. If using using skin-on chicken, add the chicken skin-side down and cook until the skin is lightly browned. Approximately 3-5 minutes. If using skinless chicken, go straight to the next step.
  2. Add the broth, rice, Italian seasoning, salt, pepper, garlic powder, and onion powder to the pot. Stir to mix well. Stir in the rice. Add the chicken on top.
  3. Close lid and seal valve. Set high pressure and cook 22 minutes. When cooking time is complete, quick the release pressure.
