Slow cooker chicken and rice is an easy one-pot recipe that can be served any day of the week, any time of the year. Chicken, brown rice, and herb seasonings cook together all at one in this simple yet tasty Crock-Pot recipe. Instructions to make this easy chicken recipe in the Instant Pot are also included.

Ingredients

  • 1 pound chicken thighs
  • 1 cup long-grain brown rice or white rice, rinsed
  • 2 cups low-sodium chicken broth or water (1 1/3 cup for Instant Pot)
  • 1 tablespoon Italian seasoning or another dried herb
  • 1 teaspoon salt (or more)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

Instructions

Slow Cooker

  1. Add the rice, broth, Italian seasoning, salt, garlic powder, onion powder, and pepper to the slow cooker. Stir to mix well.
  2. Add the chicken on top of the food in the slow cooker. Season the chicken with the remaining 1 teaspoon of Italian seasoning.
  3. Cook HIGH 2-3 hours or LOW 4-6.

Instant Pot 

  1. If using using skin-on chicken, add the chicken skin-side down and cook until the skin is lightly browned. Approximately 3-5 minutes. If using skinless chicken, go straight to the next step.
  2. Add the broth, rice, Italian seasoning, salt, pepper, garlic powder, and onion powder to the pot. Stir to mix well. Stir in the rice. Add the chicken on top.
  3. Close lid and seal valve. Set high pressure and cook 22 minutes. When cooking time is complete, quick the release pressure.
