Slow cooker chicken thigh dinner makes meal time easy! This one-pot recipe combines chicken thighs, potatoes, and green vegetables like green beans or asparagus…all cooked together in the slow cooker. Tailor this easy slow cooker chicken recipe to your liking by using your preferred potatoes and green veggies. Instructions to make this tasty chicken dish in the Instant Pot are also included.

Ingredients

  • 3 pounds chicken thighs
  • 1 1/2 pounds potatoes
  • 1 1/2 pounds asparagus or green beans
  • 3 tablespoons seasonings (see below for homemade)
  • 1 cup low-sodium chicken broth (Instant Pot only)
Homemade Rotisserie Seasoning
  • 1 tablespoon paprika
  • 2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cayenne

Instructions

Slow Cooker

  1. Add chicken to the slow cooker.
  2. In a small bowl, mix together the homemade rotisserie seasonings. Season the chicken all over with the rotisserie seasonings.
  3.  Add the potatoes to the slow cooker on top of the chicken.
  4. Cook HIGH 2-3 hours or LOW 4-6.
  5. The last 30 minutes of cooking time, add the asparagus or green beans.

Instant Pot

  1. Pour 1 cup chicken broth into the pressure cooker.
  2. In a small bowl, mix together the rotisserie seasonings. Season the chicken with the rotisserie seasonings and add to the pot.
  3. Add the on top of the seasoned chicken.
  4. Close lid and seal valve. Set high pressure and cook for 15 minutes (make sure internal temperature for the chicken is 165° Fahrenheit).
  5. When cooking time is complete, quick release the pressure. Add the potatoes and green vegetable.
  6. Close lid and seal valve. Set high pressure and cook 3 minutes. When cooking time is complete, quick release pressure.
  7. Carefully remove the food, it will be hot.

Notes

How long you cook your chicken & potatoes for will depend on their size.
