How To Make A Chicken Thigh Dinner In The Crock-Pot
- Add chicken to the slow cooker.
- In a small bowl, mix together the rotisserie seasonings. Season the chicken with the rotisserie seasonings.
- Add the potatoes to the slow cooker on top of the chicken.
- Cook HIGH 2-3 hours or LOW 4-6.
- The last 30 minutes of cooking time, add the asparagus or green beans.
- Pour 1 cup chicken broth into the pressure cooker.
- In a small bowl, mix together the rotisserie seasonings. Season the chicken with the rotisserie seasonings and add to the pot.
- Add the on top of the seasoned chicken.
- Close lid and seal valve. Set high pressure and cook for 15 minutes (make sure internal temperature for the chicken is 165° Fahrenheit).
- When cooking time is complete, quick release the pressure. Add the potatoes and green vegetable.
- Close lid and seal valve. Set high pressure and cook 3 minutes. When cooking time is complete, quick release pressure.
- Carefully remove the food, it will be hot.
FAQs & Tips
What type of seasoning should you use?
Of course you can always use your preferred seasoning for this chicken dinner but if you’re looking for homemade rotisserie inspired seasoning, mine is included in the recipe box. The seasoning is enough for a little over 3 pounds chicken without having to make any adjustments to the measurements.
What kind of chicken thighs should you use?
This recipe is meant for chicken thighs. This can be bone-in, boneless, skin-on, or skinless. I use 3 pounds of bone-in, skin-on thighs.
Can you use frozen chicken?
For the slow cooker, no I do not recommend it however for the Instant Pot, yes you can. If you choose to do so, increase the cooking time from 15 minutes to 20 (maybe more depending on the size of your chicken).
Can you use chicken breasts?
While this is a chicken thigh dinner, technically you you can always use white meat. If you use chicken breasts (white meat) in the slow cooker, the cook time will remain the same however don’t leave the chicken in the slow cooker when it’s done cooking. The chicken will continue to cook and dry out.
What type of potatoes should you use?
Use your preferred potatoes, This can be waxy potatoes like red potatoes or whole russet [Idaho] potatoes. If you use a potato like russet or even sweet potatoes (paleo), I suggest you leave them whole. Cutting them into chunks will cause them to overcook and turn mushy. What you see in the pictures is baby red potatoes.
What type of vegetables should you use?
I like to use green beans or asparagus with this chicken thigh dinner. Other suggestions include asparagus, broccoli, or even zucchini.
You don’t add liquid to the slow cooker?
Nope. There’s NO liquid added to the slow cooker. With the Instant Pot, you will need 1 cup of broth or water for it to pressurize properly.
How do you store leftovers?
Store leftover slow cooker chicken thigh dinner in the refrigerator for up to 4 days.

- 3 pounds chicken thighs
- 1 1/2 pounds potatoes

This chicken is SOOO GOOD! I think our crockpot must cook a little colder because the potatoes and green beans took longer than listed here. But I could eat this chicken all day long. So flavorful and buttery soft. I am normally not a fan of crockpot chicken but this was awesome. I will be making it again. And the hallmark of a good meal: my husband asked for the recipe to make at the firehouse for 6 other guys on his night to cook. And they all raved about it too!
This recipe is sooooo good! I had some chicken thighs that I wanted to cook but nothing I thought of sounded appetizing. Until I saw this recipe on Instagram. I had forgotten I save this recipe a while ago and I had all the ingredients on hand. I didn’t change a thing! I followed the recipe and everything turned out delicious! I typically don’t like to reheat chicken but I was able to reheat pieces for lunch all week!!! I’m making this again this week for meal prep!! It is delicious!!!
Excellent recipe! Next time I will add the green beans a little sooner so they get a little softer, just because my husband prefers them softer. But this meal had great flavor and was so filling. Even my very picky 6 year old loved it. Definitely recommend.
