This whole30 meatloaf (paleo option too) and potatoes recipe is made in the slow cooker for an easy meal the entire family will enjoy.
Meatloaf in the slow cooker? Of course. With the potatoes cooking right along side them. This meatloaf recipe is whole30 and paleo and can be cooked in the oven or even Instant Pot. I had a feeling almond flour would be a great accompaniment to the meatloaf and it was. I have not tried this using coconut flour. If you’re not following whole30 you can swap out the almond flour for breadcrumbs. Heck, you can use your favorite meatloaf recipe if you have one.
I put my meatloaf in foil to catch the grease. This is an optional step. You can put the meatloaf directly in the slow cooker. If you do put it directly in the slow cooker then the potatoes will cook in its juices. If not, if you use a foil wrap like I did, then pour 1/4 cup of water on top of the potatoes so they don’t burn and stick to the slow cooker. I even add some ghee. For the potatoes I used baby potatoes. Use sweet potatoes if you’re paleo.
Diced tomatoes or tomato sauce. Having made this both ways, personally I prefer the diced tomatoes. Tomato sauce works well too, the meatloaf will just be a little more wet. If you find your meatloaf too wet for your liking, add a little more almond until it evens out.
I used ground beef. If you use ground chicken or turkey, lower the cooking time by an hour or so. But always remember to cook your meat to the appropriate temperature.
You’ll need a 6-quart slow cooker for this. I included a recipe for an easy whole30/paleo ketchup. Of course you can use whatever ketchup you like or omit it all together.Print
- 1 lb potatoes or sweet potatoes, chopped
- Salt & pepper to taste
- 1 lb ground meat
- 1 small egg
- 1 small onion, diced
- 2 cloves garlic
- 4 ounces diced tomatoes or tomato sauce
- 3/4 cup almond flour
- 2 tbsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 8 oz can tomato sauce
- 1/2 tsp vinegar
- 1 tsp Italian seasoning
- In a large bowl, mix together all the meatloaf ingredients until well blended. Shape the meat mixture into a loaf and place in slow cooker. Optional step is to place the meatloaf on a sheet of foil before adding it to the slow cooker.
- Add potatoes around the loaf. Season the potatoes with salt & pepper.
- Cook on HIGH 3-4 hours or LOW 6-8.
- About 10 minutes before cook time is completed, mix together ketchup ingredients and spread on top of meatloaf.
- Cover & cook the remaining 10 minutes.
Don’t be surprised if there’s a fair amount of grease in your slow cooker from the meatloaf. It will all depend on how lean your meat is. I use a turkey baster to remove some of it.
