This healthy slow cooker paleo meatloaf recipe is packed with vegetables but not lacking in flavor. Paired with potatoes it’s a whole 30 one-pot meal.
Meatloaf in the slow cooker? Of course. I used lean ground turkey from Jennie-O but you can use the ground meat of your choice whether it be ground beef, pork, chicken or turkey. I usually use beef but I particularly used turkey this time. Since turkey dries out faster than beef I wanted to show you how slow cooking meatloaf produces a nice juicy finished product. I should note that as with anything, this recipe is not 100% foolproof. You can of course over-cook this! But’s it’s pretty hard to.
The meatloaf recipe is paleo. I’ve been itching to use the bag of Almond Pro almond flour in my cupboard. I had a feeling it would be a great accompaniment to the loaf and it was. You can use coconut flour if you don’t have almond flour. If you’re not following a paleo lifestyle you can swap out the almond flour for breadcrumbs. I also added chopped spinach. You can get creative here and add different vegetables. Other suggestions include kale, bell pepper, diced mushrooms, etc. If the diced tomatoes makes your loaf a little too wet then just add a little more flour until it evens out.
You’ll need a 5 or 6 quart slow cooker for this. I get asked all the time – can you double the recipe? You can double this recipe but not if you’re using the potatoes. With potatoes there isn’t room however if you’re not using the pound of potatoes then feel free to double-away. If you choose to omit the potatoes and double the meatloaf, you do not need a larger slow cooker. I included a recipe for an easy paleo ketchup. Of course you can use whatever ketchup you like or omit it all together.
- 1 lb ground meat
- 1 lb fingerling potatoes
- 1 small egg
- 1 small onion, diced
- ½ cup spinach, chopped
- 2 cloves garlic
- 8 ounces diced tomatoes
- ¼ cup almond flour
- 2 tbsp Italian seasoning
- 1 tsp Himalayan salt
- ½ tsp pepper
- 1 8 oz can tomato sauce
- ½ tsp vinegar
- 1 tsp Italian seasoning
- In a large bowl, mix together all the ingredients except the potatoes. Shape the meat mixture into a loaf and place in slow cooker.
- Add potatoes around the loaf.
- Cook on HIGH 2-3 hours or LOW 4-6.
- About 10 minutes before cook time is completed, mix together ketchup ingredients and spread on top of meatloaf.
- Cover & cook the remaining 10 minutes.
I served my meatloaf & potatoes with my Slow Cooker Lemon-Garlic Asparagus. Yup, asparagus in the slow cooker!
