How To Make Meatloaf and Potatoes In The Crock-Pot
- Spray the slow cooker generously with cooking spray.
- In a large bowl, mix together all the meatloaf ingredients until well blended. Shape the meat mixture into a loaf and place the meatloaf on a sheet of foil OR place it directly in the slow cooker.
- Add the potatoes around the meatloaf.
- Cook on HIGH 3-4 hours or LOW 6-8.
- 30 minutes before cook time is completed, spread ketchup on top of meatloaf, cover & cook the remaining 30 minutes. You can also let the meatloaf cook the entire way through, remove it from the slow cooker, spread the ketchup on top and broil it in the oven for a few minutes.

What Is Meatloaf?
To me meatloaf is comfort food at its finest. I love meatloaf, always have. Meatloaf is a food that’s eaten worldwide; there are tons of variations of meatloaf out there, varying by region. In general meatloaf is ground meat mixed with some sort of binding agent that’s formed into a loaf and cooked. My version here is based on the classic American meatloaf.
Why does this version use almond flour?
Almond flour is used in place of the traditional breadcrumbs to make this recipe Whole30 compatible. I also use a sugar-free, store-bought compliant ketchup. The actual meatloaf is low-carb & keto friendly but once you add the potatoes to the recipe, that’s no longer the case.
What type of potatoes should you use?
I like to use baby potatoes for this recipe however any potato will work, even sweet potatoes. Peel the potatoes or leave them whole. The potatoes are added directly to the slow cooker around the meatloaf. If you put your meatloaf directly in the slow cooker without using the foil, the potatoes will cook in meatloaf fat & juices.
Will there be a lot of grease?
Cooking the meatloaf in foil rather than directly in the slow cooker base will allow the foil catch the majority of the grease. There will be lots of grease. I like spoon out the grease before I adding the ketchup on top of the meatloaf.
When should you add the ketchup?
You have 2 options for adding the ketchup. When there’s 30 minutes left in the cooking time, spread the ketchup on top of the meatloaf and cook the remaining time. OR remove the meatloaf from the slow cooker and place it on a baking pan. Spread the ketchup on top and pop it in the oven under the broiler for a few minutes. This step is easy to do if you cook the meatloaf in the foil.
How do you store leftovers?
Store leftover crockpot meatloaf and potatoes in the refrigerator for up to 4 days.
What size slow cooker did you use?

I love meatloaf in the crockpot. I have an aluminum (disposable) pan that I recycle just for the crockpot. I originally bought it with a loaf cake in it once upon a time. It fits my oval crockpots perfectly. It fits on the “ledge” where the lid sits and remains suspended in the air “baking” the meatloaf while my potatoes are all along the bottom. Love your recipe! My daughter made this and it was scrumptious. As a low carber could I substitute something else for potatoes like fresh cauliflower or broccoli ?
