Crockpot Chipotle Mashed Sweet Potatoes

Crockpot chipotle mashed sweet potatoes is easy recipe that is both sweet and spicy. Whether you’re looking to spice up your next holiday party, family dinner, or meal prepping for the week, this paleo, Whole30, and vegan friendly sweet potato recipe is sure to impress.  Instructions on how to make chipotle mashed sweet potatoes in the Instant Pot are also included.

Ingredients

Units Scale
  • 2 pounds sweet potatoes, peeled and chopped into chunks*
  • 1 to 2 chipotle chili in adobo sauce
  • 1/4 cup maple syrup or honey
  • 1/4 cup milk of your choice
  • 1/2 teaspoon salt (or more)
  • 1/4 teaspoon pepper
  • 1 cup water for Instant Pot only

Instructions

Slow Cooker

  1. Add all ingredients to the slow cooker. Stir to mix well.
  2. Cook on high for 2 to 3 hours or  LOW 4 to 6 hours.
  3. Let the sweet potatoes cool slightly. Transfer to a medium size bowl or mash directly in the slow cooker. Mash potatoes using preferred method (potato masher, hand mixer, etc). Add more milk if needed.

Instant Pot

  1. Leave the sweet potatoes whole and unpeeled for the Instant Pot
  2. Pour 1 cup of water into the Instant pot and add the trivet. Place the sweet potatoes on the trivet.
  3. Close lid and seal valve. Set high pressure and cook for 15 minutes. When cooking time is complete, quick release the pressure.
  4. Stir in the chipotle pepper and maple syrup. Transfer to a medium size bowl or mash directly in the Instant Pot. Mash potatoes using preferred method (potato masher, hand mixer, etc). Add more milk if needed.

Notes

* leave the sweet potatoes whole and unpeeled for the Instant Pot version
