2poundsboneless, skinless chicken breasts or thighs
1 15-ouncefull-fat coconut milk
Juice of 1 lime
1 1/2 teaspoons salt
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon coriander
1/4 teaspoon pepper
1/2cup fresh cilantro, chopped for garnish
Instructions
Slow Cooker
Add the coconut milk, salt, pepper, garlic powder, cumin, coriander, and lime juice to the slow cooker. Stir to mix well.
Add the chicken and half of the fresh cilantro. Toss until the pieces are covered.
Cook HIGH 2-3 hours or LOW 4-6.
Garnish with fresh cilantro before serving.

Close lid and seal valve. Set high pressure and cook for 10 minutes (make sure internal temperature for the chicken is 165° Fahrenheit). Quick release pressure.
