Crockpot coconut cilantro lime chicken is a simple yet flavorful slow cooker recipe. 

Ingredients For Crockpot Coconut Cilantro Lime Chicken

  • Chicken Breasts or Thighs
  • Coconut Milk
  • Cilantro
  • Lime
  • Seasonings: salt, pepper, cumin, coriander, garlic powder

How To Make Crockpot Coconut Cilantro Lime Chicken

Slow Cooker

  1. Add the coconut milk, salt, pepper, garlic powder, cumin, coriander, and lime juice to the slow cooker. Stir to mix well.
  2. Add chicken. Toss until the pieces are covered. 
  3. Cook HIGH 2-3 hours or LOW 4-6.
  4. Garnish with fresh cilantro before serving.

Instant Pot

  1. Add coconut milk, salt, pepper, garlic powder, cumin, coriander, and lime juice to the pressure cooker. Stir to mix well.
  2. Add chicken. Toss until the pieces are covered..
  3. Close lid and seal valve. Set high pressure and cook for 10 minutes (make sure internal temperature for the chicken is 165° Fahrenheit). Quick release pressure.
  4. Garnish with fresh cilantro before serving.

What cut of chicken should you use?

Technically, you can use your preferred cut of chicken in this recipe. Since I like to shred the meat, I use boneless, skinless chicken breasts or thighs. If you don’t plan on shredding the chicken, you can also use bone-in thighs or legs.

How do you serve this?

How you serve this will all depend on your dietary restrictions. The obvious answer is over rice whether is be cauliflower rice, brown rice, jasmine rice etc. It’s also good served over a bed of zoodles (zucchini noodles), noodles, in a tortilla, or even over a bed of your favorite greens (kale, spinach, lettuce).

How do you store leftovers?

Store leftover crockpot coconut cilantro lime chicken in the refrigerator for up to 4 days. 

What size slow cooker did you use?

I use a  6-quart slow cooker or Instant Pot for this recipe.

  • 1 15-ounce full-fat coconut milk
  • Juice of 1 lime
  • 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/4 teaspoon pepper
  • 1/2 cup fresh cilantro, chopped for garnish

  1. This was incredibly flavorful and delicious! I used the slow cooker and doubled the recipe. I had nearly 4 lbs of chicken done in maybe 10 mins of prep time and 5 hours of slow cooking. I coupled the chicken with some stir fried veggies and extra topping of fresh cilantro, green onions, and a squeeze of like. I’m set for the week!! Thank you for the super tasty recipe!

    Did you use sweetened or unsweetened coconut milk, and is it for sure coconut milk and not coconut cream?

  3. Made this on 6/23/2020 and it was good!! I didn’t have the coriander or cumin ? so I used some curry powder instead and it came out tasty. I know that it would have been even better if I had those two missing ingredients. You all should give this a try ?

    I see you are cooking the chicken skin on. When you take the chicken out of slow cooker to remove the meat do you disregard the skin you have spiced?

  8. Hi! Can you just tell me what size crockpot you have? I find that recipes tend to differ depending on the size of the slow cooker (i.e. might need to adjust for seasoning etc.) THANKS!

  9. I’m a little disappointed in this dish. It didn’t turn out as flavorful as I had hoped it would. I added the ingredients precisely as instructed. I’m not sure where I went wrong. 🙁

    1. Aw man I’m super bummed to hear that. I’m sorry you were disappointed with the flavor. You probably didn’t do anything wrong. In looking at it, maybe there needs to be more cumin & coriander for a chicken that size. Thank you for your feedback. I’ll definitely revisit this. I hope this doesn’t discourage you from trying some more of my recipes!
