Fiesta in the slow cooker and your mouth. There are only a few ingredients in this flavorful Mexican inspired crock-pot dish. You can eat this as an one-pot meal or you can serve it in a tortilla or over lettuce.
This is one of those slow cooker meals that you would never guess was cooked in a slow cooker. The colors remained vibrant on all the food. If you haven’t noticed I use my slow cooker year-round.
While there are technically six ingredients, I’m still labeling this as a 5-ingredient or less recipe because it’s so simple.
This calls for 2-3 lbs of chicken. I know that’s a slightly vague instruction. For the chicken you can use almost any cut: boneless, bone-in, skinless, skin-on, breast, leg, thigh, etc. This time I used 4 large chicken breast that totaled little over 2 lbs. In the past I have used a whole 3 lb chicken cut up and there was no difference between the two final results. Taste-wise at least.
The beans. You can use pre-soaked or canned. If you use canned make sure to drain and rinse them first. Same goes for the corn. How are you serving this? In a tortilla?
- 2-3 lbs chicken
- 15 oz black beans
- 15 oz fiesta style corn
- 1 onion, sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1½-2 tbsp Flavor God's Taco Tuesday*
- Handful fresh cilantro
- *If you don't have Flavor God, use this taco seasoning (makes about 2 tbsp, equivalent to 1 packet)
- 1 tbsp chili powder
- 1½ tsp cumin
- 1 tsp salt
- 1 tsp pepper
- ½ tsp paprika
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp crushed red pepper flakes
- ¼ tsp oregano
- Add all ingredients to the slow cooker.
- Stir to mix well.
- Cook HIGH 2-3 hours; LOW 4-6 or until chicken is done.
