These slow cooker garlic Parmesan potatoes are an easy side dish that delivers big flavor with minimal effort. This garlicky recipe is perfect for busy weeknights, holiday dinners, or anytime you need a tasty side dish that pairs well with just about everything. Ingredients

  • 2 pounds baby potatoes, sliced
  • 1/2 cup Parmesan cheese, grated
  • 1/3 cup Parmesan cheese, shredded
  • 1 tablespoon garlic powder
  • 2 garlic cloves, minced
  • 1 tablespoon oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup water or broth (Instant Pot only)

Instructions

Slow Cooker

  1. Spray the slow cooker generously with cooking spray.  Add all the ingredients to the slow cooker. Toss gently until all the potatoes are evenly covered.
  2. Cook on LOW for 4 to 6 hours or HIGH for 2 to 3 hours.
  3. Top with shredded Parmesan cheese. Turn off the slow cooker and let it sit with the lid on, the cheese will melt in a few minutes.

Instant Pot

  1. Spray the Instant Pot generously with cooking spray.
  2. Add water or broth to the Instant Pot. Add all the ingredients. Toss gently until all the potatoes are evenly covered.
  3. Close lid and seal valve. Set high pressure and cook for 3 minutes. When done, quick release pressure.
  4. Top with shredded Parmesan cheese. Turn off the Instant Pot and let it sit with the lid on, the cheese will melt in a few minutes.

Notes

You may need more or less cooking time depending on the size of your potatoes and how hot your crockpot heats.
