This slow cooker meatball zoodle soup is a soup that you serve year-round. This easy crockpot meatball soup combines homemade meatballss, fresh zucchini noodles (zoodles), and a flavorful broth. The result is a soup that is both hearty and light. Ideal for a healthy meal without sacrificing taste, this soup is perfect for any season. Instructions to make this meatball zoodle soup in the Instant Pot are also included.

Ingredients

MEATBALLS
  • 1 pound ground beef
  • 1 small egg
  • 2 tablespoons almond flour
  • 2 teaspoons dried parsley or another herb
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
SOUP
  • 4 cups low-sodium beef broth
  • 15 ounces crushed or diced tomatoes
  • 2 sticks of celery, sliced
  • 1/3 cup onion, diced
  • 1 small carrot, diced
  • 1 garlic clove, minced
  • 1 tablespoon dried parsley
  • 1 teaspoon salt (or more)
  • 1/2 teaspoon pepper
  • 1 large or 2 small zucchinis, cut into spaghetti-like noodles
  • 1 tablespoon oil (for Instant Pot only)

Instructions

Slow Cooker

  1. Add the soup ingredients EXCEPT the zucchini noodles to the slow cooker. Stir to mix well.
  2. Drop the meatballs into the soup. Stir gently.
  3. Cook HIGH 2-3 hours or  LOW 4-6.
  4. Stir in the zucchini noodles. Cook for an additional 5-10 minutes or until the zucchini is soft to your likiing.

Instant Pot

  1. Turn the Instant Pot to sauté. Once hot, add the oil, onion, carrots, and celery to the pot. Cook 5-7 minutes or until the veggies are soft. Add the garlic and cook an additional minute.
  2. Pour in the broth and deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon. Stir in the all the remaining ingredients except the zucchini noodles (zoodles). 
  3. Close lid and seal valve. Set high pressure and cook for 20 minutes. When cooking time is complete, quick release the pressure.
  4. Open the lid and stir in the zucchini (zoodles). Let sit in the Instant Pot for 5-10 minutes or until the zoodles are soft.
