Ingredients

  • 16 ounces frozen potstickers
  • 12 ounces packaged coleslaw
  • 1/2 cup onion, diced
  • 2 garlic cloves, minced
  • 4 ounces mushrooms, sliced
  • 1/2 cup carrots, shredded or diced
  • 1 cup spinach, chopped
  • 4 cups low-sodium broth
  • 1 1/2 cups water
  • 1/2 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 1/2 teaspoons ground ginger
  • 1/2 teaspoon salt (or more)
  • 1/4 teaspoon pepper

Instructions

Slow Cooker

  1. Add all the ingredients except the potstickers and spinach to the slow cooker. Stir to mix well.
  2. Cook on HIGH for 2 to 3 hours or LOW 4 to 6.
  3. Stir in the potstickers and cook and additional 10 to 15 minutes. Stir in the spinach before serving.

Instant Pot

  1. Add all the ingredients except the potstickers and spinach to the Instant Pot.  Stir to mix well.
  2. Close lid and seal valve. Set high pressure for 12 minutes. When cooking time is complete, quick release the pressure.
  3. Open the lid. Set Instant Pot to the sauté setting. Stir in the potstickers and cook an additional 10 minutes or until they are soft. Stir in the spinach before serving.
