Top Crockpot Brunch Casseroles

Here is a list of my top slow cooker brunch casseroles. Save time & take the fuss out of your next brunch by serving a slow cooker casserole! All of these casseroles can be cooked overnight or can be made ahead of time. Don’t have a slow cooker? Don’t worry, these casseroles can also be baked in the oven.

What Size Slow Cooker To Use

All of the breakfast casseroles you see listed here are made with 12 large eggs so you will need a large 6-quart slow cooker. Having said that, you can easily cut any of these recipes in half if you have a smaller 3-quart slow cooker.

Baking Instructions

Yes, all of these casseroles can be baked. Assemble the casserole as you would for the slow cooker but instead add it to a greased 9×13 baking pan instead. Bake at 350 degrees F for approximately 50 minutes. Please note the baking time is approximate so you may need to make some adjustments.

Tips For A Successful Breakfast Casserole

There are a few things you need to do or know to make a slow cooker breakfast casserole a good one:

1) Grease the heck out the slow cooker. When I spray mine heavily with cooking spray, the casserole slides out with no sticking. You can also line your slow cooker with parchment paper or use a slow cooker liner.

2) Let the casserole cool completely before removing it. This too will help it from not sticking to the base.

3) Every slow cooker heats differently. Your casserole might done after 6 hours on low or it might take 8. Insert a knife into the center; when it comes out clean you’ll know it’s done. Mine usually takes about 6 1/2 hours on low.

Storing & Freezing Your Casserole

Slow cooker breakfast casseroles will keep for up to 4 days in the refrigerator. After that, you can freeze any leftovers. Freeze for up to 2 months. To serve, thaw overnight in the refrigerator & reheat in the microwave or oven. You can also make any of these breakfast casseroles ahead of time with the sole purpose of freezing it. Breakfast casseroles are great meal prep recipes! To do so, once the casserole has cooled completely, slice and freeze it sections or freeze the casserole as a whole if your freezer permits it.

This slow cooker breakfast casserole has all the ingredients from the classic Denver omelette. Make this low-carb/keto breakfast with minimal effort. This casserole is low-carb & keto friendly.

4. Slow Cooker California Burrito Breakfast Casserole

Made famous in San Diego, the California burrito uses French fries instead of rice & beans. This slow cooker version adds eggs for a great breakfast or brunch casserole.
