How To Make Pork and Beans In The Slow Cooker

Prepare The Pork

  1. In a small bowl, mix together the seasonings. Run the mixture evenly, all over the pork.
  2. Use more or less seasonings to your liking.  

Slow Cooker

  1. Add all the remaining ingredients to the slow cooker. Stir to mix well. Add the prepared pork. 
  2. Cook HIGH 8-10 hours

Instant Pot

  1. Turn on the Instant Pot and select sauté. Once hot, add the prepared pork and sear a few minutes on each side. Remove the pork and set aside. Add the onion and bell pepper & cook a few minutes until soft. You may need to add more oil. Add garlic and cook an additional minute.
  2. Turn off the Instant Pot. Pour in the water and deglaze the bottom of the by scraping all the bits off with a wooden spoon.
  3. Add the dry white beans, bacon, onion, garlic, ketchup, molasses, dry mustard, garlic powder, salt, and pepper. Stir to mix well. Return the pork back to the pot.
  4. Close lid and seal valve. Cook high pressure for 65 minutes. When cooking time is complete, natural release pressure for 15 minutes then quick release any remaining pressure.

What Type Of Pork To Use

This slow cooker pork and beans recipe uses a combination of pork shoulder (or butt) and bacon. I like to use a boneless cut of pork shoulder. As with all of my recipes, I encourage you to use your preferred cut of meat. In place of the pork shoulder, other suggestions include ham hocks, country-style ribs, or smoked sausage.

What Type Of Beans To Use

No soaking required! The beauty of the slow cooker is that it will cook the dry white beans to tender without having to pre-soak them first. However, this means it will take longer to cook. Every slow cooker and Instant Pot heats different. You may need more or less time for your white beans to properly cook. 

FAQs & Tips

  • In order for the beans and pork to cook properly, this pork and beans recipe cooks for 8-10 hours on HIGH. It’s a great overnight slow cooker pork reicpe. If you want to cook this on LOW, it will take around 16-20 hours. 
  • Play with the flavor profile! Don’t like ketchup? Substitute BBQ sauce!
  • Maple syrup, honey, or brown sugar are good substitutions for molasses. 
  • Speed up the cooking time by pre-soaking your white beans or using canned. 
  • If you have the time, stir the pork and beans halfway through cooking. This helps keep the beans from sticking to the slow cooker. 
  • There is no need to wast your time precooking the bacon.  Even if you do, it’s slow cooking for hours; the end result will be soft bacon regardless. If you have leftover cooked bacon, you can use it in place of the uncooked bacon.
  • Store leftovers in the refrigerator for up to 4 days or the freezer for 3 months.

  • 4 ounces uncooked bacon, chopped
  • 16 ounces dry white beans (like grean northern or navy)
