Slow Cooker Meatball Zoodle Soup

Slow cooker meatball zoodle soup is a soup you serve year-round. This easy crockpot meatball recipe combines homemade meatballss, fresh zucchini noodles (zoodles), and a flavorful broth. The result is a soup that is both hearty and light. Ideal for a healthy meal without sacrificing taste, this soup is perfect for any season! Instructions to make this meatball zoodle soup in the Instant Pot are also included.

Ingredients For Slow Cooker Meatballs Zoodle Soup

  • Ground Meat
  • Zucchini
  • Broth
  • Diced or Crushed Tomatoes
  • Carrots
  • Celery
  • Onion 
  • Garic
  • Seasonings: salt, pepper, dried parsley
  • Almond Flour
  • Egg

How To Make Slow Cooker Meatballs Zoodle Soup

Slow Cooker

  1. Add the soup ingredients to the slow cooker. Stir to mix well.
  2. Drop the meatballs into the soup. Stir gently.
  3. Cook HIGH 2-3 hours or  LOW 4-6.
  4. Stir in the zucchini noodle. Cook for an additional 5-10 minutes or until the zucchini is soft to your likiing.

Instant Pot

  1. Turn the Instant Pot to sauté. Once hot, add the oil, onion, carrots, and celery to the pot. Cook 5-7 minutes or until the veggies are soft. Add the garlic and cook an additional minute.
  2. Pour in the broth and deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon. Stir in the all the remaining ingredients except the zucchini noodles (zoodles). 
  3. Close lid and seal valve. Set high pressure and cook for 20 minutes. When cooking time is complete, quick release the pressure.
  4. Open the lid and stir in the zucchini (zoodles). Let sit in the Instant Pot for 5-10 minutes or until the zoodles are soft.  

FAQs & Tips

What are zoodles?

Zoodles are zucchini cut into the shape of spaghetti noodles.  They’re a great healthy alternative to pasta because they’re low-carb, paleo, and Whole30 compatible. I use a spiralizer  to make my zoodles. If you don’t have a specific zoodle maker, you can use a simple julienne peeler.

Can you use a different ground meat?

Absolutely. What you see in the pics is ground beef. Substitute ground turkey, chicken, pork, ground sausage, or a combination without making any changes to the recipe.   

What can you substitute for the dried parsley?

Another dried herb! Suggestions include basil, oregano, thyme, or rosemary. 

Can you use your own meatball recipe?

Of course. Feel free to swap in your preferred meatball recipe if you do not want to use mine. The meatball recipe I include in the recipe box is low-carb, paleo, and Whole30 compatible. 

How do you store leftovers?

Store leftover crockpot meatball zoodle soup the refrigerator for up to 4 days. 

What size slow cooker should you use?

I used a 6-quart slow cooker or Instant Pot.

Ingredients

MEATBALLS
  • 1 pound ground beef
  • 1 small egg
  • 2 tablespoons almond flour
  • 2 teaspoons dried parsley or another herb
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
SOUP
  • 4 cups low-sodium beef broth
  • 15 ounces crushed or diced tomatoes
  • 2 sticks of celery, sliced
  • 1/3 cup onion, diced
  • 1 small carrot, diced
  • 1 garlic clove, minced
  • 1 tablespoon dried parsley
  • 1 teaspoon salt (or more)
  • 1/2 teaspoon pepper
  • 1 large or 2 small zucchinis, cut into spaghetti-like noodles
  • 1 tablespoon oil (for Instant Pot only)

Instructions

  1. Add the soup ingredients EXCEPT the zucchini noodles to the slow cooker. Stir to mix well.
  2. Drop the meatballs into the soup. Stir gently.

  1. I use my slow cooker year round also. Since I started using a slow cooker, I make meals in it at least 1-2x per week. It is way too convenient to put away!
