Crockpot Sausage, Potatoes & Green Beans

Crockpot sausage, potatoes & green beans is a tasty one-pot recipe that uses simple, affordable ingredients. Also known as Hoosier Stew, this smoked sausage & potato recipe is kid-friendly and family friendly. This is also a recipe that can be served year-round. Instructions to make this easy slow cooker meal in the Instant Pot are also included.

Ingredients For Crockpot Sausage, Potatoes & Green Beans 

  • Sausage – 1 pound
  • Potatoes – 1 pound
  • Green Beans – 1 pound
  • Broth – 1 cup
  • Onion – 1/3 cup 
  • Garlic – 1 minced clove
  • Seasonings: salt, pepper, paprika

How To Make Sausage, Potatoes & Green Beans 

Slow Cooker

  1. Add all ingredients to the slow cooker. Stir to mix well.
  2. Cook HIGH 2-3 hours, LOW 4-6.

Instant Pot

  1. Add all ingredients to the Instant Pot. Stir to mix well.
  2. Close lid and seal valve. Set high pressure and cook for 12 minutes. When cooking time is complete, quick-release the pressure.

What Type of Sausage To Use

This recipe calls for smoked sausage. That means the sausage is already cooked. As with most of my recipes I encourage you to your preferred sausage or a sausage that fits your lifestyle and budget.

What Type Potatoes To Use

Use your preferred potato. What you see in the pics is russet potatoes that are peeled & chopped. Potatoes are easy to overcook in the slow cooker & if you do, they turn to mush. As a way around this, I suggest cutting the potatoes into large chunks or leave the skin on. This will help them hold their shape during the long cooking process. Waxy potatoes like red potatoes also work well with this recipe. 

What Type of Green Beans To Use

I like to use fresh green beans with this recipe however canned and frozen can also be used. If you don’t like green beans, substitute another vegetable like broccoli or chopped asparagus.

  • Use your preferred broth! Vegetable broth, chicken broth, beef broth. I used beef smoked sausage & low-sodium beef broth. 
  • I used a 3.5-quart slow cooker for this recipe but it can easily be doubled and cooked in a 5 or 6-quart.

Ingredients

  • 16 ounces smoked sausage, cut into 1-inch rounds
  • 1 pound potatoes, peeled & chopped
  • 1 pound fresh green beans, trimmed
  • 1/3 cup onion, diced
  • 1 garlic clove, minced
  • 1 cup broth
  • 1 1/2 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper

Instructions

Slow Cooker

  1. Add all ingredients to the slow cooker. Stir to mix well.

  1. Can you use canned whole green beans and or even frozen? If so, will there be any difference in the prep and cooking time etc?

  2. I will be using store made sausage that is not cooked, should I cook the sausage before using it?

    1. Nope. This will work just fine with uncooked sausage. It will look different, mainly the sausage will be ‘soft’ and not firm but the taste will still be there. You can quickly sear the sausage before adding to the slow cooker but that’s not really necessary. Enjoy!

    I used baby carrots and celery instead of green beens and it turned out wonderfull. That’s the great thing about the instant pot, put whatever you have in it and it comes out delish.
