Crockpot Beef Bean Spinach Soup

  • Ground Beef
  • White Beans
  • Spinach
  • Beef Broth & Water
  • Onion
  • Garlic
  • Celery
  • Carrots
  • Seasonings: salt, pepper, dried rosemary

How To Make Crockpot Beef Bean Spinach Soup

SLOW COOKER

  1. Heat oil in a large skillet. Once hot, add the ground beef and onion. Cook 5-7 minutes or until the ground beef is no longer pink. Crumble the ground meat as it cooks. Add the garlic and cook an additional minute. Drain the grease and add the mixture to the slow cooker.
  2. Add all the remaining ingredients except the spinach. Stir to mix well.
  3. Cook HIGH 3-4 hour or LOW 6-8.
  4. Stir in the spinach.

Instant Pot

  1. Turn on the pressure cooker and select sauté. Add the oil. When hot, add the ground beef and onion. Cook 5-7 minutes, crumbling the ground beef as it cooks. Add the garlic and cook an additional minute. Drain the fat from the Instant Pot.
  2. Stir in all remaining ingredients except the spinach. 
  3. Close lid and seal valve. Set high pressure and cook for 25 minutes. When cooking time is complete, quick release the pressure.
  4. Open the lid and stir in the spinach. 

FAQS & Tips

What type of white beans should you use?

This slow cooker soup uses cooked, white beans. I prefer to use canned white beans that I drain & rinse first.  Examples included great northern beans and cannellini beans, 

Can you use frozen spinach?

Yes! Frozen spinach work just as well. 

What can you substitute for the rosemary?

Use another dried herb if you don’t have rosemary. Suggestions include thyme, oregano, parley, or basil. 

How do you store leftovers?

Store leftover slow cooker beef bean spinach soup in the refrigerator for up to 4 days. 

What size slow cooker did I use?

I used my 3.5-quart slow cooker for this recipe.

  • 15 ounces white beans, drained and rinsed
  • 1 cup spinach, chopped
  • 4 cups low-sodium beef broth
  • 2 cups water
  • 1/3 cup onion, diced
  • 2 garlic cloves, minced
  • 2 celery ribs, sliced
  • 1 medium-size carrot, diced
  • 2 teaspoons dried rosemary or thyme
  • 1 1/2 teaspoons salt
  • 1/2 teaspoons pepper
  • 1 tablespoon oil

Instructions
