Crockpot Beef Taco Casserole

Crockpot beef taco casserole is an easy recipe the entire household will enjoy. This slow cooker Mexican inspired casserole combines all the classic flavors tacos and their sides: tortillas, ground beef, cheese, black beans, corn, tomatoes, and a homemade taco seasoning. Sit back and let slow cooker does all the work; the end result is a tasty, cheesy casserole.

Ingredients For Crockpot Beef Taco Casserole

  • Ground Beef
  • Black Beans
  • Corn
  • Diced Tomatoes with Green Chiles
  • Cheddar Cheese
  • Tortillas
  • Homeade Taco Seasonings: chili powder, cumin, oregano, salt, pepper, garlic powder, onion powder, red pepper flakes

How To Make Crockpot Beef Taco Casserole

Slow Cooker

  1. In a large bowl, mix together the cooked ground beef, corn, black beans, diced tomatoes with green chiles,  and the taco seasoning ingredients.
  2. Spray the slow cooker generously with cooking spray. Spread 1/3 of ground beef mixture on the bottom, top with 1/3 of the cheese. add 2 tortillas. You may need to overlap the tortillas.
  3. Repeat the layers: another 1/3 of the ground beef mixture, another 1/3 of the cheese, 2 more tortillas.
  4. Top with the remaining 1/3 of ground beef mixture, and then the remaining 1/3 cheese.
  5. Cook HIGH 2-3 hours or LOW 4-6.

BAKE

  1. Preheat oven to 375 degrees. Spray a 9×13 baking dish with cooking spray.
  2. In a large bowl, mix together the cooked ground beef, corn, black beans, diced tomatoes with green chiles,  and the taco seasoning ingredients.
  3. Spread 1/3 of  the ground beef mixture on the bottom. Top 1/3 of the cheese. Add 2 of the tortillas. You may need to overlap them in the middle to make them fit. 
  4. Repeat layers: 1/3 of the ground beef mixture, another 1/3 of the cheese, 2 more tortillas. 
  5. Top with the remaining 1/3 of ground beef mixture, and then the remaining 1/3 cheese.
  6. Bake uncovered for 30 minutes or until cheese is bubbling & starting to brown.

What type of tortillas should you use?

You’ll like this answer – your preferred tortilla! To me, this is a low-carb casserole because I have only made this recipe using a low-carb tortilla or low-carb flatbread. You can use whatever tortilla you like whether it be flour, corn, wheat, low-carb, etc. 

What Type Of Cheese To Use

I use cheddar cheese with this recipe. You can use your preferred cheese whether it be cheddar, a Mexican white cheese, or a blend of cheeses. 

How do you store leftovers?

Store leftover crockpot beef taco casserole in the refrigerator for up to 4 days. 

What size slow cooker should you use?

I used a 6-quart slow cooker.  I have not made this in the  Instant Pot but I have baked this.  Baking instructions are included in the recipe card below.

  • 15 ounces corn (frozen or fresh)
  • 15 ounces black beans, cooked*
  • 10 ounces diced tomatoes with green chiles
  • 4 flour tortillas
  • 4 cups cheddar cheese, shredded
Homemade Taco Seasoning
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoon cumin
  • 1 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes

Instructions

*If you use canned black beans, rinse and drain them first

    1. You are incorrect and of course you do not have to guess. I do actually list how much of each ingredient. All of the measurements are listed in the recipe box. There’s even a ‘jump to recipe’ at the top of the page.
