Slow Cooker Cheeseburger Casserole

Slow cooker cheeseburger casserole an easy & flavorful recipe the entire family will enjoy. The cheeseburger is classic American dish for a reason. From the seasoned beef patty to the melted cheese, it’s a staple in American cuisine. Here I take all the deliciousness of a cheeseburger and turned it into a casserole! Meat, cheese, mustard, relish, etc…all the traditional components are here. This kid-friendly crockpot casserole will soon be rotation in your household.

Ingredients For Crockpot Cheeseburger Casserole

  • Ground Beef
  • Tortillas
  • Cheddar Cheese
  • Onion
  • Mustard
  • Relish
  • Tomato Sauce
  • Seasonings: salt, pepper

How To Make Cheeseburger Casserole In The Crockpot

  1. In a large skillet over medium-heat, add the ground beef and onion. Cook approximately 5-7 minutes or until the meat browned and the onion soft. Crumble the meat as it cooks. Drain excess grease. 
  2. Add the relish, mustard, salt, pepper, and tomato sauce to the skillet. Cook a few minutes until heated through.
  3. Spray the slow cooker generously with cooking spray.
  4. Divide the meat mixture into thirds. Place 1/3 of the meat mixture in the bottom of the slow cooker. Top with 1 cup of cheese, and then add 2 tortillas. You may need to overlap the tortillas to make them fit. Repeat the layers as such: another 1/3 of the meat mixture, 1 cup cheese, 2 tortillas, the remaining 1/3 of the meat mixture, and the remaining 1 cup of cheese.  
  5. Cook HIGH 2-3 hours or LOW 4-6.

FAQs & Tips

Can you make this low-carb?

Yes! To me, this is a always a low-carb casserole because I always make this cheeseburger-inspired recipe using low-carb tortillas. I also use a dill relish that has 0 added sugar. I encourage you to use your preferred tortilla whether it be low-carb, whole wheat or regular flour. 

Will the casserole stick to the crockpot?

It has the potential to. Be sure to spray the slow cooker generously with cooking spray. If you don’t have cooking spray, you can also put parchment paper down before adding the building your casserole. This will help prevent it from sticking to the sides of the slow cooker. Let the casserole cool before slicing. This will also help prevent it from sticking to the sides.

Do you have to use ground beef?

Nope. Use your preferred ground meat. Ground turkey turns this into a tasty ground turkey cheeseburger casserole!  

What kind of cheese should you use?

I like to use cheddar cheese. Other suggestions include Swiss or provolone cheese. You can even add vegetables like diced mushrooms & bell peppers to the meat mixture.

What do you garnish this with?

Garnish with your favorite burger toppings. I used shredded lettuce and sliced tomatoes. 

How do you store leftovers?

Store leftover crockpot cheeseburger casserole in the refrigerator for up to 4 days. 

What size slow cooker did you use?

I use a  6-quart slow cooker.

  • 2 pounds ground beef, seasoned with salt & pepper
  • 1/2 cup onion, diced
  • 2 tablespoons relish
  • 2 tablespoons dry mustard or yellow mustard
  • 8 ounces tomato sauce or ketchup
  • 1 1/2 teaspoons salt (or more)
  • 1/2 teaspoon pepper
  • 3 cups cheddar cheese (or more)
  • 4 medium-size soft flour tortillas

    I currently have this recipe in my slow cooker. I did not use relish, the onion flakes, or the garlic (tummy issues) but I added everything else; and, I’m already thinking-after a taste-that this is a recipe that will satisfy my occasional burger craving. I used corn tortillas and topped with bacon. I’ll eat my servings with pickles. I’m looking forward to making this recipe regularly.
