Crockpot ground beef vegetable soup is a easy and comforting soup recipe that uses affordable ingredients. Ingredients For Crockpot Ground Beef Vegetable Soup

  • Ground Beef
  • Frozen Vegetables
  • Potatoes
  • Onion 
  • Garlic
  • Beef Broth
  • Crushed Tomatoes
  • Seasonings: salt, pepper, dried parsley

How To Make Crockpot Ground Beef Vegetable Soup

SLOW COOKER

  1. Heat oil in a large skillet. Once hot, add the ground beef and onion. Cook 5-7 minutes or until the ground beef is no longer pink. Crumble the ground meat as it cooks. Drain the grease and add the beef to the slow cooker.
  2. Add all the remaining ingredients. Stir to mix well.
  3. Cook HIGH 3-4 hour or LOW 6-8.

Instant Pot

  1. Turn on the pressure cooker and select sauté. Add the oil. When hot, add the ground beef and onion. Cook 5-7 minutes, crumbling the ground beef as it cooks. Add the garlic and cook an additional minute. Drain the fat from the Instant Pot.
  2. Stir in all remaining ingredients. 
  3. Close lid and seal valve. Set high pressure and cook for 25 minutes. When cooking time is complete, quick release the pressure.

FAQs & Tips

What type of vegetables should you use?

 I like to keep it simple so I use a bag of mixed frozen vegetables. This includes carrot, peas, green beans, and corn. 

What if you don’t have frozen vegetables?

Use fresh! Personally, I hate chopping vegetables so I jump at the chance to use frozen. 12 ounces of fresh or canned (rinsed and drained) also work well. 

Can you add in more vegetables?

Of course! Celery, mushrooms, zucchini, etc. The sky is the limit. I encourage you to use a combination of your favorite veggies. 

What type of potatoes should you use?

Use your preferred potatoes! Russet, yellow, red, or even sweet potatoes. What you see in the pictures is chopped baby red potatoes. 

How do you store leftovers?

Store leftover slow cooker ground beef vegetable soup in the refrigerator for up to 4 days. 

What size slow cooker did you use?

I use a  6-quart slow cooker or Instant Pot for this recipe.

  • 1/3 cup onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 15 ounces crushed or diced tomatoes
  • 1 tablespoon dried parsley
  • 2 teaspoons salt (or more)
  • 1/2 teaspoon pepper
  • 1 tablespoon oil of your choice
