Layers of gravy, stuffing, turkey, greens, and mashed potatoes…the crockpot melds all the flavors, allowing you to enjoy the essence of Thanksgiving in every bite!

How To Make Crockpot Leftover Thanksgiving Casserole

  1. Spray the slow cooker generously with cooking spray.
  2. Pour 1/2 cup of the gravy into the bottom of the slow cooker. Crumble the leftover stuffing on top of the gravy in an even layer. Add the turkey on top of the stuffing. Pour 1/4 cup of the gravy on top of the turkey. Spread the greens in an even layer on top of the turkey.  Spread the mashed potatoes on top of the greens. Pour the remaining 1/4 of gravy on top of the mashed potatoes.
  3. Cook on HIGH for 2 to 3 hours or LOW 4 to 6.
  4. Garnish with the cranberry sauce before serving.

FAQs & Tips

Do you have to use all the layers?

Nope! Use whatever leftovers you have. For example, if you do not have greens, omit them. Or if you have mac and cheese…add it in! 

Do you add seasonings?

Since these are leftovers, the food should already be seasoned. If you find that is not that case, the seasonings I suggest adding are salt, pepper, thyme, garlic powder, and onion powder. 

How do you store leftovers?

Store leftover crockpot leftover Thanksgiving holiday casserole in the refrigerator for up to 4 days. 

What size slow cooker did you use?

I use a  6-quart slow cooker or Instant Pot for this recipe.

Below you will find approximate measurements. In general, use as little or as much leftovers that you have.
  • 1 pound leftover turkey
  • 6 ounces leftover stuffing
  • 2 cups leftover greens
  • 2 cups leftover mashed potatoes
  • 1 cup leftover gravy
  • 1/2 cup leftover cranberry sauce (for garnish, optional)

Instructions

  1. Spray the slow cooker generously with cooking spray.
