When it came time to shop for my keto products I turned to iHerb. Days later, I had all the base ingredients I needed for this recipe. I just needed to add the beef and mushrooms. I used beef stew meat but you can use your preferred cut of beef. Beef sirloin cut up would be my second choice.
This recipe is the trifecta, as I like to call it – low-carb, paleo, and whole30. But really, this one is all about being keto. Between the avocado oil and the ghee, the fats in this recipe are pretty high. Whether you use 1 or 2 tbsp of ghee is up to you. I usually use 1 tbsp. You can always stir in more when it’s done cooking if you want.
I know not everyone likes mushrooms hence why I marked it as an optional ingredient. I love mushrooms with my steak but if you don’t then simply leave them out the recipe. Maybe add some bell pepper in its place. You can jazz this up a bit with some of your favorite veggies. I’ve been all about dried minced onion these days if you haven’t noticed. Chalk it up to pure laziness; it’s so much easier for me to grab a tablespoon of minced onion than to take the time to chop one up. But of course, you can use a onion instead (like I did in the video).
More bone broth ? There’s a reason I said 1 cup or more. Having made this several times now both ways I can tell you 1 cup of broth is enough for me but if you want a lot of gravy, you can use more. Personally I prefer this recipe with less. It’s all just a matter of how much liquid you want. Even without a lot bone broth, you’ll still have a nice little ghee, garlicky sauce afterwards.
Instant Pot Steak Bites VIDEO:
- Turn on Instant Pot to ‘Saute’ mode.
- Once heated, add oil & beef stew meat and cook a few minutes until browned. Remove beef and add onion, garlic, and mushrooms (if using) and cook a few minutes, until vegetables are soft.
- Stir in beef broth. Deglaze the bottom by of the pressure cooker by scraping all the bits off off with a wooden spoon. Stir in steak seasoning and ghee.
- Add beef back to the pressure cooker and stir.
- Close lid and seal valve. Set high pressure and cook 9 minutes. Quick release pressure.
- Add all ingredients to the slow cooker. Stir to mix well.
- Cook HIGH 2-3 hours or LOW 4-6.
If you’re using the slow cooker, you have the option to brown the meat before adding it in. I do not when making this recipe because I don’t think it needs it. Also, since the meat is cut up, it will not take as long to cook as say a slow cooker roast would. The slow cooker cook time is 2-3 hours on high or 4-6 hours on low. I used a 6-quart slow cooker or Instant Pot for this recipe.
I like to serve this over mashed or riced cauliflower.
