When it came time to shop for my keto products I turned to iHerb. Days later, I had all the base ingredients I needed for this recipe. I just needed to add the beef and mushrooms.
This recipe is also paleo and whole30 compliant. The trifecta, as I like to call it. But really, this one is all about being keto. Between the avocado oil and the ghee, the fats in this recipe are pretty high. Whether you use 2 tbsp of ghee or more is up to you. I usually use 2 tbsp. You can always stir in more when it’s done cooking if you want.
I know not everyone likes mushrooms hence why I marked it as an optional ingredient. I love mushrooms with my steak but if you don’t then simply leave them out the recipe. Maybe add some bell pepper in its place. You can jazz this up a bit with some of your favorite veggies. I’ve been all about dried minced onion these days if you haven’t noticed. Chalk it up to pure laziness; it’s so much easier to grab a tablespoon of minced onion than to take the time to chop one up.
More bone broth ? There’s a reason I said 1/2 cup or more. Having made this several times now both ways I can tell you 1 cup of broth is not needed. Personally I prefer this recipe with less. Having said that, if you’re looking to turn this more into a stew or if you want more liquid for a nice gravy then definitely use the bone broth! It’s all just a matter of how much liquid you want. Even without a lot bone broth, you’ll still have a nice little ghee, garlicky sauce afterwards.Print
Instant Pot Keto Steak Bites (Low-Carb,Paleo,Whole30)
- Prep Time: 5 minutes
- Cook Time: 9 minutes
- Total Time: 14 minutes
- Yield: 4 servings
- Turn on Instant Pot to ‘Saute’ mode.
- Once heated, add oil & beef stew meat, garlic, and mushrooms (if using) and cook a few minutes, until browned. Stir frequently so garlic doesn’t burn.
- Add all remaining ingredients. Stir to mix well.
- Close lid and seal valve. Set high pressure and cook 9 minutes. Quick release pressure.
Quick release or natural? Again, up to you. Quick release will stop the food from cooking. Natural pressure release means that food will still be cooking until the pressure drops naturally. Most times I quick release…because it’s faster!
Of course you can make this in your slow cooker if you want. Same initial instructions except instead of adding everything to your Instant Pot, put it in your slow cooker and cook high 2-3/low 4-6. Since the meat is cut into pieces, it won’t take a long to cook as red meat traditionally would need to. I like to serve this over mashed or riced cauliflower.
