Pizza chicken is an easy low-carb recipe that can be made in the slow cooker or Instant Pot. Serve this kid-friendly meal any day of the week.
I know I say this a lot, but this recipe has been on my mind for a long time. Pepperoni is a random food ingredients that I keep in my house at all times. I love to eat pepperoni. I love chicken too so it was only a matter of time before I paired the two. I’m kind of on a low-carb kick with the release of my latest cookbook, The Healthy Low-Carb Slow Cooker Cookbook (shameless plug) this week. No, this recipe isn’t in the cookbook but it is low-carb.
While I kept things simple and only used pepperoni, what I love about this recipe is that you can jazz the pizza chicken up with your favorite pizza ingredients. For example you can top it with browned sausage, ground meat, or make it ‘vegetarian’ and use all vegetables like bell peppers, onions, and olives. Please note that even though I said make it vegetarian, the dish is not a vegetarian dish. I was referring to the toppings that you add over the chicken as being vegetarian.
I used boneless, skinless chicken breasts but you can use chicken breasts or thighs. If you use thighs then add an additional 30 minutes to an hour on to the cooking time since you’ll be working with dark meat rather than white meat. Below is my homemade pizza blend. Another option is to use Italian seasoning. Since my pizza seasoning doesn’t include salt, I include it in the recipe. If you opt to use a store-bought pizza seasoning, before you add salt to this recipe, check to see if your pizza seasoning already has some in there. A good way to check is to taste it.
Homemade Pizza Seasoning Blend
1 tbsp oregano
2 1/2 tsp basil
2 tsp cayenne
1/2 tsp thyme
1/2 tsp garlic salt
1/4 tsp fennel or dill seed
Use as much or as little cheese as you want. I used a little less than one cup. Keep in mind that you can always add more cheese later or on top as a garnish.
I put 1 lb of chicken in a 6-quart slow cooker and as you can see, there was plenty of room for more food. In retrospect, I should have used my 3.5-quart slow cooker given that I only used 1 pound of chicken. Double this recipe and use your 6-quart slow cooker or Instant Pot to feed a larger crowd.Print
- 1 lb boneless, skinless chicken breasts
- 15 ounces diced tomatoes
- 2 tbsp pizza seasoning
- 3 ounces pepperoni
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup mozzarella cheese , shredded
- Add diced tomatoes to the bottom of the slow cooker.
- Season chicken with salt, pepper, and pizza seasoning and add to the slow cooker.
- Top chicken with pepperoni and cheese.
- Cook HIGH 2-3 hours, LOW 4-6.
- Add diced tomatoes to the IP.
- Season chicken with salt, pepper, and pizza seasoning. Add to the IP and top with pepperoni.
- Close lid and seal valve. Set high pressure and cook for 8 minutes. (make sure internal temperature for the chicken is 165° Fahrenheit)
- Quick release pressure .
- Top with shredded mozzarella cheese. Cook on warm until cheese is melted.
