Throw your favorite Italian ingredients in the slow cooker with your favorite cut of chicken for this easy and healthy slow cooker recipe.

Whole 30 is officially over. And yet here is another whole 30 recipe for you. I’m not going to continue on with whole 30 but the majority of my recipes are whole 30 compliant anyway. Not much has or will change with the posts here. This recipe is whole 30 and I made it paleo as well by using white sweet potatoes. You can use your preferred potatoes.

For the chicken use your preferred cut! I went with boneless, skinless chicken breasts but you can use legs, thighs, skin-on, skinless, etc. For the veggies – load it up with your favorites. Tomatoes, garlic, onion bell pepper, artichokes and olives sounded nice to me. Mushrooms, diced eggplant even asparagus would be good additions too.

Confession time – the main reason I did not continue on with whole 30 is…WINE.  I don’t know about y’all but I don’t like to have an Italian meal without a nice glass of wine. Would you drink a glass of red or white with this meal?

Ingredients

Scale
  • 2 lbs chicken (I used boneless, skinless breasts), chopped
  • 1 lb white sweet potatoes, chopped
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 ounces black olives, sliced
  • 6 ounces artichokes
  • 15 ounces diced tomatoes
  • 3 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/2 tsp parsley
  • 1/4 tsp red pepper flakes

Instructions

  1. Add all ingredients to the slow cooker.
  2. Stir to mix well.
  3. Cook HIGH 2-3 or LOW 4-6.

    I’ve never heard of a white sweet potato. Do they taste the same as an orange sweet potato?

      They’re a little less sweet than orange sweet potatoes and little milder in flavor. If you have a Sprouts or Trader Joe’s near you then they should definitely have them.

      Personally I eat it as-is because it includes potatoes however over rice or cauliflower would be yummy!
