What Is Pork Tenderloin?

Pork tenderloin (not to be confused with pork loin) is a lean and flavorful cut of pork. Butchered from the muscle that runs alongside the back of the pig, tenderloin is a long, boneless, thin cut that’s usually sold in one whole piece. Pork tenderloin not only lean but also one the most tender cuts of pork! It’s great for grilling, marinating, and of course wrapping in bacon.

What Type Of Bacon To Use

I mean who doesn’t love bacon? Of course you can use whatever brand of bacon you like for this recipe. However, if you want this air fryer bacon wrapped pork tenderloin to be Whole30 compatible, you will need to use compliant bacon. Most brands add nitrates & sugar to their bacon. Neither of which are allowed while on Whole30. When you are picking a Whole30 bacon brand for this recipe, be sure to look at the labels and choose one that’s both sugar-free and nitrate-free. My go-to Whole30 compatible bacon is Naked Bacon.

Baking Instructions

I understand everyone might not have an air fryer. While I do recommend you get one, you can also bake this bacon-wrapped pork tenderloin in the oven. Assemble the bacon wrapped pork tenderloin as you would for the air fryer. Place the tenderloin on the baking sheet and cook at 375 degrees for 25 minutes. Let rest 5 minutes. When ready to serve, slice the bacon wrapped pork tenderloin into 1-inch thick rounds.

FAQs & Tips

  • I found that cooking this bacon wrapped pork tenderloin at temperature higher than 350 degrees in the air fryer burned the bacon & undercooked the pork tenderloin. Depending on how crispy you like your bacon, you may want to cook it longer than
  • You may need to cut your pork tenderloin into pieces to get it to fit like I did here. If so, I recommend cutting the tenderloin before wrapping it in bacon.
  • Add more bacon if you want! My one-pound pork tenderloin used 5 slices of bacon. Depending on the brand of bacon you use, your bacon strips might be larger or smaller.
  • The USDA recommends cooking pork tenderloin to an internal temperature of 145° F. Every air fryer is different; you might need to cook your pork tenderloin a few minutes more or less to get to the correct internal temperature.
  • I used a 5.8-quart air fryer for this recipe.

  1. Made this recipe came out perfectly my husband love it so tender wrapped the meat in foil after cooking let it rest before slicing and serving

  2. Hello Shannon! Does the time change if the pork loin is 8 ozs rather than 1 lb when using the air fryer?
    Thanks!

  3. Just made this for dinner, my husband and I loved it! Will definitely make it again, it was delicious! Thank you!!

  4. Deborah Lewis

Would like to try this in slow cooker. Approximately how long on low, how long on high? Any difference in use of bacon with pork re slow cooker? Thanks.

  5. Can you cook this recipe using an instapot or in the oven instead. I don’t have any air fryer. Would the cook time and temp be different or the same? Thanks.

    1. You can bake this in the oven!

  6. I found your page after the Whole 30 takeover. This recipe is simple, fast and easy. Such a delicious weeknight meal that made great leftovers!

  7. Question…. I have some pork loin not tenderloin. I know you distinguish the two in the recipe, but what would be the difference if I use loin instead? (Completely clueless about the difference!)

    1. You can absolutely use a pork loin. You might need to add more cook time because a loin is not as lean as a tenderloin and can come with bone-in. Depending on the cut you have, maybe add an additional 5-10 minutes.

  8. I saw this recipe on Shannon’s Instagram account, and finally made it for dinner tonight. It was so delicious! The seasoning and we used hickory smoked bacon were fantastic!
I may need to dial back the air fryer time a bit as the pork seemed a bit overdone but it’s also nice to be able to set it up to run and go about doing other things instead of standing and cooking for 30 minutes.

I will definitely be making this again.
