Slow Cooker Bacon Wrapped Meatloaf + VIDEO

This slow cooker bacon wrapped meatloaf is easy to make & can be served any day of the week. You can also make this low-carb, paleo, whole30 meatloaf in your Instant Pot.

I mean who doesn’t love meatloaf? It’s perfect for family dinner, totally acceptable to order at a restaurant, and it’s a great meal prep menu item.

What Is Meatloaf

To me meatloaf is comfort food at its finest. I love meatloaf, always have. Meatloaf is a food that’s eaten worldwide; there are tons of variations of meatloaf out there, varying by region. In general meatloaf is ground meat mixed with some sort of binding agent that’s formed into a loaf and cooked. My version here is based on the classic American meatloaf.

A Healthy Meatloaf Recipe

It was important to me that this slow cooker or Instant Pot meatloaf recipe be healthy. As a result, this bacon wrapped meatloaf recipe is low-carb, keto, paleo and whole30 compliant. Almond flour is used in place of the traditional breadcrumbs and I used sugar-free, store-bought compliant ketchup.

Bring On The Bacon

I use 6-8 slices of bacon. How many slices of bacon you use will depend on a few factors. How large is your meatloaf, how much you like bacon. If you’re following a paleo or whole30 lifestyle you will want to use a whole30 compliant bacon.

Extra Grease

Cooking the meatloaf in foil rather than directly in the slow cooker base will allow the foil catch the majority of the grease. There might be a lot of grease depending on how lean your ground beef is.

Broil (Crisp The Bacon)

As you can see in the after pic, the bacon will not be crisp when the this bacon wrapped meatloaf is done cooking in your slow cooker or Instant Pot. As a final step, I recommend you remove the meatloaf from the appliance and place it under the broiler. This is when you will add the ketchup which I also highly recommend. Spread the ketchup on top and pop it in the oven under the broiler for a few minutes. This step is easy to do if you cook the meatloaf in the foil, you just carefully pull it out.

Baking Instructions

This recipe is so good that it’s one of the rare instances where I am including baking instructions. Preheat the oven to 350 degrees F.  Prepare meatloaf as you would for the slow cooker but instead place in inside a casserole dish. Cook approximately 40 – 50 minutes or until the internal temperature for the meatloaf reaches 160°F. Cool for at 15 minutes before slicing & serving.

Bacon Wrapped Meatloaf

Ingredients

Units Scale
  • 1/2 pound bacon (approximately 6-8 slices)
  • 1 cup ketchup
  • 1 cup water (for Instant Pot only)
Meatloaf:
  • 2 pounds ground beef
  • 1 egg
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ketchup
  • 1/2 cup almond flour
  • 2 tablespoons Italian seasoning
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper

Instructions

Prepare the meatloaf

  1. In a large bowl, mix together meatloaf ingredients.
  2. Arrange the bacon slices crosswise on a piece of foil or cutting board, overlapping them slightly.
  3. Form the meatloaf into a medium size rectangle and place it in the middle of the bacon slices. Fold the bacon slices over the meatloaf, tucking the ends into the bottom of the loaf. Make sure your meatloaf will fit in the appliance you’re using.

Slow Cooker

  1. Place a sheet of aluminum  in the slow cooker. Place the prepared bacon wrapped meatloaf on the foil with the tucked pieces of bacon at the bottom.
  2. Cook HIGH 3-4 hours or LOW 6-8.
  3. See final broil step below.

Instant Pot

  1. Add the water to the bottom of the Instant Pot.
  2. Place a sheet of aluminum on a wire rack or trivet. Add the prepared bacon wrapped meatloaf on the foil with the tucked pieces of bacon at the bottom.
  3. Close lid and seal valve. Set high pressure for 24 minutes. When cook time is done, let the pressure release naturally.
  4. See final broil step below.
Broil
  1. Turn your oven on to broil.
  2. Carefully remove the meatloaf from the slow cooker or Instant Pot and place on a baking sheet. Discard any grease drippings.
  3. Rub ketchup evenly across the cooked meatloaf.
  4. Place the meatloaf under the broiler for 2-5 minutes or until the top is crisp to your liking.

  2. I have been making meatloaf in the Crockpot for years but this was the first time I used bacon. I really liked the meatloaf, I will use that recipe again even for baking it. I skipped adding ketchup on top but I didn’t broil the loaf after it was done cooking. Great recipe!

      Looks like a great recipe, but I’m not clear on which is the “tucked” side. Am I correct in assuming that the bacon will be on top in the slow cooker?
