Fried mushrooms are a guilty pleasure of mine. I have always loved them. These days I don’t fry anything. Now that I have made these in the air fryer, I don’t think I’ll have them any other way.

Ingredients For This Fried Mushroom Recipe

  • Mushrooms: 24 ounces of white mushrooms cleaned with stems removed.
  • Almond flour: Almond flour is used as the breading to keep these fried mushrooms keto and paleo friendly.
  • Ground pork rinds: The special ingredient in the breading is ground up pork rinds. You can buy store-bought or make your own. 
  • Seasonings: The seasonings are simple: salt, pepper, garlic & onion powder, and paprika. 
  • Eggs: You’ll need 2 large eggs.

How To Make Keto Fried Mushrooms In The Air Fryer

Making fried mushrooms in the air fryer is easy. The hardest part is breading the mushrooms! Correction, nothing about this recipe is hard. But as someone who uses their slow cooker almost daily, breading the mushrooms is a lot more labor intensive than I am use to.

What Type Of Mushrooms To Use

I used white button mushrooms. I found that bite-size mushrooms are easier to eat but they also make more work. I suggest you don’t use mushroom that are too big or too small. If the mushrooms you are using are too large, I recommend that you cut them in half.

Using An Air Fryer

So what is an air fryer? It doesn’t actually fry your food. Really, it’s a countertop convection oven. Air fryers are great for cooking food quickly and getting that fried texture by using only a small amount of oil. These appliances come in different styles and sizes. What you see here in the picture is a 6-quart air fryer that can easily fits up to a pound of large mushrooms.

Adding Pork Rinds

The key ingredient in this keto air fryer fried mushrooms recipe is….ground up pork rinds! I use a brand called Pork Panko but there are other brands available. Or you can make your own. Look at the ingredient list when choosing a brand. What I like about Pork Panko is that their product has 0 carbs and is keto and paleo friendly. Pork panko is currently not whole30 compliant, it’s considered food freedom. If you don’t have ground pork rinds, add an additional 1/3 cup of almond flour.

How To Serve Fried Mushrooms

Fried mushrooms are traditionally served with ranch or another type of dipping sauce. Horseradish, hot sauce…you can serve the fried mushrooms using the sauce that fits your dietary lifestyle. 

Tips For This Keto Fried Mushrooms Recipe

  • Don’t double drudge. I know a lot of recipes will tell you to double-dip. I found that this cause the breading to be too thick which caused the mushrooms to cook improperly.
  • Flip or shake the mushrooms at the halfway point. While it’s not necessary, I recommend you do so.

Ingredients

  • 24 ounces large white mushrooms
  • 2 eggs
  • 1 cup almond flour
  • 1/3 cup ground pork rinds (or more almond flour)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400 degrees.
  2. Spray the air fryer basket with cooking spray.
  3. In a medium-size bowl, whisk together the eggs. In another medium-size bowl, mix together the almond flour, ground pork rinds, salt, pepper, garlic powder, onion powder, and paprika.
  4. Take a mushroom and dip it in the egg, then dip it in the almond flour mixture, then place it in the air fryer basket. Repeat this process until all the mushrooms are used. Do not overlap. You may have to do this in batches depending on the size of your mushrooms and air fryer.
  5. Spray the tops of the mushrooms lightly with cooking spray. Cook for 6 minutes at 400 degrees. Shake or flip the mushrooms. Cook an additional 6 minutes.

    These were absolutely delicious and so easy. I used cassava flour due to daughter’s tree nut allergy and dipped in low-fat buttermilk rather than egg since I was low on eggs, and my husband I both loved them. Reminded me of the deep fried mushrooms from a favorite local restaurant without the guilt.
