Slow Cooker Creole Beef + VIDEO

Slow cooker Creole beef is a cheesy roast that blends Creole spices and your favorite cut of beef. Ingredients For Creole Beef

  • Beef Roast
  • Creole Seasoning
  • Bell Peppers
  • Onions
  • Garlic
  • Beef Broth
  • Parmesan Cheese
  • Heavy Whipping Cream

How To Make Creole Beef In The Slow Cooker

Slow Cooker

  1. Add broth, bell peppers, onion, and garlic to the slow cooker. Stir to mix well.
  2. Season the beef roast generously with the Creole seasoning. Add the seasoned beef on top of the food in the slow cooker.
  3. Cook HIGH 4-5 hours or LOW 8-10. When beef if is done, remove it from the slow cooker and shred.
  4. Pour the whipping cream ( or coconut milk) and Parmesan cheese (or nutritional yeast) into the slow cooker. Stir to mix well.
  5. Add the shredded beef and stir until combined. Cover and cook an additional 10 minutes.

Instant Pot

  1. Season the beef evenly with the Creole seasoning on all sides.
  2. Turn on the pressure cooker and select sauté. Once hot, add oil to the pot. Add the beef and cook until browned, 3-5 minutes. Remove beef and set aside.
  3. Add the bell pepper and onion & cook 3-5 minutes until soft. Add the garlic and cook an additional minute. Turn off the Instant Pot.
  4. Pour the broth into the pressure cooker and deglaze the bottom by scraping all the bits off with a wooden spoon.
  5. Add beef back to the Instant Pot.
  6. Close lid and seal valve. Set manual high pressure and cook 20 minutes per pound of roast.
  7. When cook time is up, let the pressure naturally release for 10 minutes then quick release the pressure. When beef if is done, remove it from the slow cooker and shred.
  8. Turn the Instant Pot on to low sauté.
  9. Mix together the whipping cream or (coconut milk) and Parmesan cheese (or nutritional yeast). Stir the mixture into the Instant Pot. Add the shredded beef. Cook 5-10 minutes, stirring frequently.

What Cut Of Beef To Use

Personally, I like to use a chuck roast with this recipe. But that’s just me. Like a lot of my recipes, use your preferred cut of beef roast. What you see in the pictures is a 4-pound chuck roast. Other suggestions include top round roast, eye of round roast, or even brisket. The great thing about cooking a roast in the slow cooker (or Instant Pot) is that the roast will cook until it’s falling apart tender. 

Creole Seasoning

The base of a lot of Creole recipes is a good Creole seasoning. If you’re using a store-bought Creole seasoning, look out for the sodium content. My go-to store-bought Creole seasoning is Tony Chachere’s Lite Seasoning. It’s what I used here in this recipe. In the recipe box you’ll find my homemade Creole seasoning blend. It’s great on meat, poultry, seafood, and vegetables. You can mix all the spices together first or add each spice to the slow cooker one-by-one. I like to mix them all together.

The Holy Trinity

Are you familiar with mirepoix? Mirepoix is a combination of diced onions, carrots, and celery. It’s used as a base for lots of traditional recipes like soups (think chicken soup), stews, and stocks. The holy trinity, also known as the holy trinity of Creole cooking is the Creole version of mirepoix. It consists of one part bell pepper, one part celery, and one part onion. It’s the base for lots of traditional Creole recipes like gumbo, jambalaya, and étouffée. I almost used it here but after a few rounds of recipe testing I removed the celery. It didn’t fit the a creamy roast. The bell peppers and onion still made it into the recipe along with a lot of Creole seasoning.

Make This Paleo & Whole30 Compatible

If you’re paleo or Whole30, this Creole beef recipe can easily be tailored to be compliant. The 2 ingredients in question are the cream and cheese. These ingredients are eliminated when following a paleo or Whole30 lifestyle. To make this recipe paleo or Whole30 compliant, use full-fat coconut milk in place of the whipping cream and nutritional yeast for the Parmesan cheese. I find that nutritional yeast has a very strong flavor so I would only use 1/4 cup of nutritional yeast as Parmesan cheese substitute.

How To Serve This

How you serve this shredded beef recipe will depend on your dietary restrictions. I like to serve it over mashed cauliflower which is what you see here. Other suggestions include with rice (cauliflower rice, brown rice, white rice), mashed potatoes, roasted potatoes, or even in tortillas or lettuce wraps.

FAQs & Tips

  • Leftover Creole beef can stay in your refrigerator in an airtight container for up to 4 days. This tasty beef dish also freezes incredibly well and can stay in your freezer for 3 to 4 months in an airtight and freezer safe container.
  • This great served with mashed cauliflower or slow cooker mashed potatoes.
  • I used a 6-quart slow cooker or Instant Pot.

  • 1/2 cup onion, diced
