Add a quick herb seasoning on the cornish hens and toss in your favorite vegetables for this easy and healthy slow cooker meal.
If you can’t tell, I still have my husband on his first whole 30 program. This is another whole 30 approved slow cooker meal. I feel silly saying creating whole 30 meals recipes for the slow cooker has been easier than I thought it would be because to me that’s like saying eating healthy is easier than I thought. I figured out years ago that eating healthy was easy and can taste good so I guess I should have known better. Still, it’s been a pleasant surprise. I promise you none of these whole 30 meals I post are lacking in flavor. This one in particular because of the seasoning I used – The Spice Cave. The Spice Cave’s seasonings are whole 30 & paleo approved. Since I’m sort of on a whole 30 journey I’m going to create 5 recipes using their seasonings. This recipe calls for their WIND and MOJO seasonings. Mostly wind with a dash of mojo to be exact.
The vegetables are what I had in my produce drawer which included cherry tomatoes, french cut green beans, and sweet potatoes all from Melissa’s Produce. Everything is topped off with a bit of ghee of course. Because ghee makes everything taste better. While I used my 3.5-quart Crock-Pot Casserole Crock Slow Cooker for this, you do not need a casserole-specific device. My two hens weighed about 5 lbs total. As long as you have a bird around that size you can use any 5 or 6 quart slow cooker. You might have to put some of your veggies on top of the Cornish hens to get them all to fit but that’s okay it should still taste the same.
- 2 Cornish hens
- 2 tbsp The Spice Cave's WIND seasoning
- 1 tsp The Spice Cave's MOJO seasoning
- ½ pint cherry tomatoes
- ½ lb green beans
- ¼ lb white sweet potatoes
- 1 tsp ghee
- Mix together WIND and MOJO seasoning. Season meat with 2 tbsp of seasoning and add to the slow cooker.
- Add remaining vegetables around meat in slow cooker.
- Sprinkle remaining 1 tsp of seasoning on vegetables.
- Add ghee to top of hens and on some of the vegetables.
- Cook HIGH 3-4 hours or LOW 6-7.
