Ingredients For Garlic Parmesan Chicken & Potatoes

  • Chicken
  • Potatoes
  • Grated Parmesan cheese
  • Shredded Parmesan cheese
  • Fresh Garlic
  • Garlic Powder
  • Italian Seasoning
  • Extra-Virgin Olive Oil
  • Salt & Pepper
  • Chicken broth (for Instant Pot only)

How To Make Garlic Parmesan Chicken & Potatoes 

Slow Cooker

  1. Add all ingredients EXCEPT the shredded Parmesan cheese to the slow cooker. Stir to mix well.
  2. Cook HIGH 2-3 hours or LOW 4-6.
  3. Top with shredded Parmesan cheese.
  4. If you turn off the slow cooker and let it sit with the lid on, the cheese will melt in a few minutes.

Instant Pot

  1. Pour broth into the pressure cooker. In a large bowl add all the ingredients EXCEPT the shredded Parmesan cheese. Pour the food mixture on top of the broth.
  2. Close lid and seal valve. Set high pressure and cook for 10 minutes (make sure internal temperature for the chicken is 165° Fahrenheit). When done, quick release pressure.
  3. Top with shredded Parmesan cheese.
  4. If you turn off the Instant Pot and let it sit with the lid on, the cheese will melt in a few minutes.

FAQs & Tips

What cut of chicken should you use?

I like to use boneless, skinless chicken breasts for this recipe.  Having said that, like most of my chicken recipes, you can actually use your preferred cut of chicken whether it be boneless or bone-in, breasts, thighs, legs, or a combination legs & thighs. I know this because I made this recipe using all of those cuts as well. If you use dark meat, add an additional hour or so to the cook time because dark meat takes longer to cook than white meat. If you’re looking for crispy skin, after the chicken is done cooking, you can remove it from the slow cooker or Instant Pot and place it under your oven’s broiler for a few minutes. Again, also optional.

What type of potatoes should you use?

Waxy potatoes always work best for slow cooking because they hold their shape better than other forms of potatoes. Again, like most of my recipes, I encourage you to use the ingredients you have & like. Meaning, you can use your preferred potato whether it be a waxy potato like red or yellow, russet potato, sweet potato, etc. If you use non-waxy potatoes like russet or sweet potatoes, I suggest you cut them into larger chunks than you usually would. This will help them hold their shape during the cooking process and not turn mushy on you.

What type of Parmesan cheese should you use? 

I used a combination of grated and shredded Parmesan.  How much Parmesan to use is debatable in my household. This too went through many trials and I finally settled on 1/2 cup of grated Parmesan mixed in  and the shredded Parmesan added the last few minutes of cook time. Don’t have shredded Parmesan? Use all grated. If you have shaved Parmesan, use that. You have some leeway here to make this recipe work for you.

What type of garlic should you use?

Minced garlic is in almost every single recipe that I post. I go through garlic probably more than any other ingredient. If you like your food really garlicky, add an additional clove or two of minced garlic to the recipe.

How do you serve this?

When it comes to serving this easy slow cooker chicken recipe, the sky is the limit! I usually keep it simple with a side salad or some sort of green vegetables.

Store leftover crockpot garlic Parmesan chicken and potatoes in the refrigerator for up to 4 days.

  • 1 1/2 pounds red potatoes, chopped
  • 1/2 cup Parmesan cheese, grated
  • 3/4 cup Parmesan cheese, shredded
  • 3 to 4 garlic cloves, minced
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon salt (or more)
  • 1/2 teaspoon pepper
  • 3/4 cup low-sodium chicken broth (for Instant Pot)

  2. I think the negative reviews are probably because they didn’t follow the recipe correctly if you’re making it in a slow cooker. I made this for dinner tonight and it turned out perfect!

So, to anyone looking to make this, please don’t be discouraged & try it for yourself. I love how easy it is to put together & even if I don’t start cooking till the afternoon, it will still be ready by dinner.

  5. I’m sorry but what a disaster of a recipe when made in the crockpot. I classify myself as a good cook so when reading the recipe and it having no liquid, I questioned it so I added liquid, which eventually the potatoes soaked it all up. The potatoes and chicken were done but this recipe was so tasteless. Would definitely not make again.

  6. This recipe has good flavor. I have to say I made it in the slow cooker and added chicken broth because I cook enough to know it would burn. I wouldn’t make this again you definitely need other things on the side I made corn on the cob and broccoli.

  7. Made it tonight with a few tweaks as well. Added in one can of condensed cream of chicken and about half a cup of broth. Slow cooked for 5 hours on Low with an additional 30 minutes with lid off after adding shredded cheese on High. Potatoes were cooked through and just the right amount of moisture in my opinion. Tasted great!

  10. Made this tonight with a few tweaks. Didn’t have Italian seasoning so I substituted oregano. Added onion powder and cubed a stick of unsalted butter. I also only used 1.5 pounds of chicken (couldn’t find any 2 pound packages at the store this week) and I would say it’s more than 4 servings. I’ll probably get 5 or 6 out of it. Paired it with a salad tonight for dinner and it was delicious. Not sure where people are getting that theirs is hard or scorched. Maybe try cutting potatoes and chicken into small pieces and/or only use the low setting. I find potatoes scorch a lot easier if using the high setting.

  11. I made a few slight changes to the recipe as I read some comments. I added about a cup of chicken stock to the bottom, & instead of the dry powders I added a packet of Italian dressing mix. It was very good

I used my slow cooker, followed the recipe and made some of additions of my own to include adding broccoli and 1/4 cup white wine. It was simple, easy to make and turned out very flavorful!

  17. Hello. Thank You for a wonderful recipe. I followed exact recipe and just had a quick question. I made it in the Instapot and had to double all ingredients due to large family lol. It turned out mushy and very liquidy. Any suggestions for next time. Any help would be deeply appreciated.

    1. I would try the recipe using no water and toss the mixture with 3/4 – 1 teaspoon chicken base. Either add a couple tablespoon of water or treat the inside with cooking spray to prevent sticking.

    1. Do you put the broth in the crock pot or just if you use the instant pot.
      It seems to me its going to like scorch or be dry if you dont put something in crockpot

        1. I added the both to the crockpot. Otherwise it would scorch. Turned out fine and delicious. Don’t forget to salt and pepper the chicken too.

    hi, is this meal very cheesy? im not keen on melted cheese but would love to try this.x

    1. Personally I don’t think so because to me Parmesan cheese isn’t a real melty type of cheese. But that’s me. If you’re worried about that, I suggest that you skip adding the shredded Parmesan cheese at the end. You can always add it later to the individual servings.

          2. Hello! You cannot, I’m glad you asked first. The slow cooker function on the Instant Pot works slightly differently than a traditional slow cooker. If you’re going to use the IP slow cooker function here you’ll need to cook it for 4-6 hours on slow cooker ‘normal’ OR on slow cooker ‘high’ for 2-3 hours and 45 minutes.

            Slow Cooker WARM setting = Instant Pot Slow Cook LOW setting

  25. Tried this tonight. Definitely don’t add shredded cheese until the end. I didn’t have grated parm, so I put some shredded into cook. It got clumpy and oily. Not good. I will try this again without the cheese and just add it at the end. Impromptu pizza night 🙁

    1. I’m sorry you changed the recipe and it didn’t work out for you. Yes, it specifically says not to add the shredded cheese at the end for that reason.

    I try to understand how to use with instant pot. It is not clear. Is it “SlowCooker” at instant pot. I guess I will use this see what happen.

      1. If I only have an instant pot. But want to use the slow cooker function can I do that? I read some where instant pot settings are: low would be a slow cooker warm, medium = slow cooker low and high = slow cooker high.

    Delicious!!! Was scared when about 30 mins into cooking in the slow cooker, I didn’t see any liquid, so I added about 1/8 cup of Olive Garden dressing that I found in my fridge. We are it with a Garlic Parmesan pasta and it was to die for. My husband wants to do it again next week and add some mushrooms!

  32. What is the salt/sodium content for this dish? My boyfriend just got put on a low sodium diet. This has been so hard trying to adjust! There is salt in everything! ?

    1. I just noticed the nutrition facts. To high in sodium, but looks amazing! Maybe I’ll make it for myself one night. ?

      1. Hi Dawn, the majority of the sodium comes from the 1.5 cups of Parmesan cheese. If you use 1/2 cup rather than 1.5 cups, the sodium content will be half of what it is, around 332.7mg. It won’t be a cheesy of course. Hope that helps!

      2. My boyfriend is also low sodium. I use no salt added broth for all our recipes, and omit the actual salt. I’ll usually add in a bit more garlic, go a bit more on the black pepper and add some red pepper flakes for a kick (if it’s a recipe that will handle it) and that works well. The no salt broth will cut the sodium in this recipe substantially!

  34. Well, tried this recipe today, made some adjustments, added onion red pepper and green pepper after 4 hours on low in the crockpot.. It was just enough to give it some additional color and flavor.

  35. My instant pot doesnt let me set time I have to choose an option like poultry, meat, soup etc. I’m gonna give it a try on the poultry setting and hopefully it cooks the potatoes too. I also added some onions just because we like onions in everything! Haha Here’s hoping this turns out as planned!

      1. What if I used the chicken broth and the oil for the Crock-Pot? I’m freaking out that I’ve possibly ruined another meal. ?

        1. It should be okay, but it will have lots of liquid. When it’s done cooking before you add the shredded Parmesan cheese, use a slotted spoon to remove the chicken and potatoes from the slow cooker. Transfer it to a a baking dish, add the shredded Parmesan cheese and bake (or microwave if using a microwavable dish) until cheese is melted.

  41. Tried the instant pot method and it was delicious! My granddaughter is visiting with us and this is the first real meal that she finished without asking for McDonald’s. The adults enjoyed it but I am always impressed when the kids finish their food. Definitely a winner!

    can you cook this in,an instant pot. And if so for how long? I am thinking about trying this with one chicken breast ( husban will not eat dark meat) and the rest with the thighs. How do you think that will turn out?

            I tried this recipe today in the slow cooker. Followed recipe to the t. And my potatoes never softened ? I have used slow cooker and instant pot for while now so not sure what happened.

            Cooking the recipe longer would mean that the chicken would probably overcook & dry out so that’s not the best solution. I have to admit, I’m shocked that the potatoes didn’t soften after 6 hours in the slow cooker. Were they very large? I’m sorry the recipe didn’t work out for you.
