Salsa verde, is a green salsa made with all-natural ingredients. Combine it with chicken or pork for a quick and healthy slow cooker recipe.

For the protein, you can use either chicken or pork. I actually looked for a nice 2-3 lb pork loin but I couldn’t find one under 5 lbs. That’s okay though because it gave me an excuse to use some of my 5280meat chicken breasts!
You’ll know the meat is done when it shreds easily with a fork. Seriously, if you take it out and it doesn’t shred easily then put it back in the slow cooker and cook for another 30 minutes.
- Add chicken to the slow cooker.
- Pour salsa on top.
- Cook HIGH 2-3 hours or LOW 4-6.
You can use this shredded meat in so many different ways: in enchiladas, in a salad, or of course to make tacos. I made tacos with Siete Foods paleo tortillas. Yes, you read that correctly they make PALEO tortillas and they’re just a good as regular ones.
